Friday Mishmash

We had a really bad storm blow in early Wednesday morning.  Jeff and I were at a (very) early breakfast meeting for the running club, and while we could see that the rain, wind, thunder and lightening was bad, we didn't realize just HOW bad it was until we drove home...as we turned into our neighborhood, trees were down, branches were all over, fences were down...we wondered if a tornado had touched down!  We had one big branch fall, which was a miracle considering all the trees we have.  And we could see that part of our fence was down.  Quite lucky as other areas had some pretty major damage.  That afternoon, once it stopped raining, I went out to take a picture of the fence.  Paco (of course) went through, right into my neighbor's backyard.  But then he didn't come back.  I walked closer and discovered that there was a lot more damage - multiple fences were down all the way to the church that is close to our subdivision...and yes, my dog decided to get a little religion.  The church is on the access road to the highway/freeway/bypass/whatever they call it in Texas, so needless to say, he wasn't allowed outside again until that evening, after Jeff and I got the fence propped back up.
 There he goes...
He came back and was making his escape again.  Luckily Paco is pretty good at coming when called (and gets rewarded with treats which MAY have something to do with that, lol), but still.  Too much freedom for that dog!

I felt bad that Paco was home alone during the storm, because the day before, when thunderstorms rolled in, he was shaking and sticking to me like glue - here he is, under my desk, sitting on my feet and leaning on my legs:
No liek thunder.  Make it stop pleeze.

Since Jeff has not been traveling as much lately, I'm actually cooking dinner more often...I know, it's shocking to me, too!  Anyway, I've finally gotten on the roasted veggies trend - Helen usually cooks up a pan on Sunday and eats them throughout the week.  I don't know how she makes it last, as Jeff and I managed to eat the entire thing in one meal!  My favorite has been carrots - these are so simple to make and yet taste like you really worked hard!
Take some sea salt, pepper, seasoning mix, and oil...
Toss it around peeled and sliced carrots...
Roast at 400 degrees for about 40 minutes - easy and delicious!

My Sit and Knit diet continues.  Look at how far I've come with my scarf!
Much like when I started my diet, I'm trying to not look at the massive amount of yarn I have yet to knit and instead, enjoying the process and the rewards as I go - with diet, it's "ooh, look at the new size!" and with this scarf, it's "ooh, look at the new color!"

I am determined to NOT have it become this:

Finally, I saw this ad in a magazine and thought of Fran:
OPI's nail polish names are always so fun - this collection includes Kiss Me on My Tulips, Gouda Gouda Two Shoes, Thanks a WindMillion, Wooden Shoe Like to Know, and Dutch 'Ya Just Love OPI?  Why yes, I do!  I'll be thinking of Fran next time I get a pedicure because I'm definitely going Dutch with my next color!

  2. Roasted vegetables are life-changers. I'm doing pretty good with making them last - it's the only way I can still justify going to Costco as a singelton! Well, that and I seem constitutionally incapable of buying tp in anything other than the pick-up load size. Now that's crazy sexy ;-).

    We didn't get the wind y'all did, just lots of blessed rain. And I, too, love the OPI. Yummy colors - just like your knitting project! You should paint your toes to match "-)

    1. We buy our TP and paper towels from Sam's - I'm out of paper towels and can't do a big Sam's buy until February 1st. Someone actually suggested to me that I just buy one roll of paper towels at the grocery store...what?!? Who does that??? I need 24 rolls! ;)

  3. I saw about the storms in Texas on the news last night and I thought of you! We have the rain right now but nowhere near as bad as that.
    Roasted veggies are my fave, I like roasted green beans.....yum.
    At least Paco comes back, my two Jack Russell's would just take off and totally ignore me!

  5. The reason the roasted veggies last at my house is because I make a couple different kinds and Mr. Helen only eats them the day that I first make them and set them in front of him at the table. After that, they're mine - all mine!

    I'm glad nothing worse than the fence coming down happened. I know that must have been scary. Ya'll made the national news!

    Can't WAIT to see the OPI colors in person. I think they'll me at my salon when I go for my mani on Wednesday. That hot pink one on the left looks like it may be a contender for my summer toe color. Hi Fran!

  7. I love roasted cooked carrots, but Tony hates them - I'll need to roast some up for my lunches next week. Escaping Paco! I had to laugh at the "he wanted to find religion!"

    Such crazy weather this winter - and happy the fense was a quick fix - have a great weekend Shelley!

  9. I'll have to try the carrots again. I tried it once and didn't like them. Which I can't even understand because I like carrots almost any way. Plus, I was with you on how does Helen make them last all week. I guess she's got a bigger pan than me!

    That weather was scary. It sure seems like tornados--tornado strength wind, I guess! Good boy Paco for coming back!

    Knitting cartoon is very funny. And I LOVE your scarf.

    1. I tried roasting cauliflower early on in my diet and hated it - was hesitant about the carrots, but so glad I made them. I got them to the almost burnt state and boy they were tasty!

      I love my scarf, too - GREAT choice on the yarn!

    2. Try this: roast cauliflower and onions, then use the puree' thingy to mush them up. You'll have roasted smashed cauliflowers and they are fantastic!

  10. "Gouda Gouda Two Shoes" - nail polish that reminds me of cheese. I think I would chew my nails.

    Glad that the damage was limited to the fence. Mother nature can be frightening and the one thing we can never control in life.

  11. Paco is such a good boy!!! Our dogs freak out when it's storms. I hear the thunder jacket thingy works! Glad you escaped major damage. I think I will roast some veggies this weekend so thank you for the reminder!!

  12. Y'all had a BAD storm! We had a tornado touch down in Pearland. The wind was scary and sounded like cats howling. I'm with Paco. Did not like!

    Mmmm....like the idea of roasting up a whole pan of veggies. I might eat more that way.

  13. We got a lot of rain but not as much wind, so no damage here, just flooded roads. Our dog also hates storms, but as long as she's safe inside she usually doesn't freak out too much.

  16. What other veggies have you tried? I am not a cooked carrot fan but they look good.

    Great colors on your scarf. Looks like it would match just about everything.

  17. Wow...that is QUITE the storm. Poor little Paco!!! I love how he's bravely venturing through the fence to inspect the damage though. "stay here mom, I'll see what's on the other side!" Awww. Hope the winds have died down and you have a great weekend. Big pat to Paco!!!

  18. Those OPI colours are so cool especially you and Helen will think of me when you have it on :) Have to go and see if they are available here. We have a shop in town that sells OPI. Had to laugh at Lori's comment though. Yes Gouda cheese is from Holland but Gouda is also a town in Holland.

    I can't say I blame Paco for exploring the neighbourhood. Think Bella would have done exactly the same :) That sure has been a heavy storm you had.

    And your scarf is growing nice and I love the colours you used.
