Food For A Damn Long Day...

I am lucky enough to only work 3 days and one evening a week - I share my job with another woman who also does not want to work full-time. Thursdays are my long days. I'm at work from 9 am to 6 pm, run home for a quick Lean Cuisine dinner, and then I'm off to a weekly meeting. I finally make it home around 9 pm - whew! Because I'm paid by the hour, I rarely take off for lunch. For that reason, I have to have healthy, easy food available for my work days. Which entails grocery shopping by Wednesday, and putting servings of said food into containers to make the morning "grab and go" as simple and quick as possible.

I thought I'd share what I've brought for Thursday...

I totally feel like Biz and Kath with this picture...of course, I do not possess the mad photography skills that they do, but you get the idea.

Breakfast: Fage 0% Greek yogurt, fresh blueberries, Kashi GoLean Crunch cereal. I love this combo! Here's my Biz imitation (love her!)...breakfast comes in at 340 calories, with 4 grams of fat, 55 grams of carbs and 25 grams of protein.

Lunch: 1 Cup of Pacific Roasted Red Pepper and Tomato soup, 4 Kashi TLC Roasted Garlic & Thyme Party Crackers, 2 Laughing Cow Light Swiss Cheese Wedges. Lunch comes in at 310 calories, with 11 grams of fat, 36 grams of carbs and 13 grams of protein. Plus there will be another cup of soup for Friday's lunch - that carton will go into the fridge at work.

Snack: 3 Cuties (clementines) - Lyn turned me on to these! And a Fuze if I want it. Snack (with Fuze) comes in at 130 calories, with 1 gram of fat, 28 grams of carbs and 2 grams of protein.

I also make a pitcher of unsweetened iced tea at work and usually finish it off by end of day on Friday.

I cram everything into my cute Built neoprene bag ($7.99 at TJ Maxx, what a bargain!) - it stretches, which is quite helpful, considering the amount of food I'm putting in it.

I have to give props to Biz, who posts pictures of her meals with nutrition information every day - I never realized how much detail and typing that entailed until this post! I'm spent!

    Lunch looks really good. I love that soup. What are Clementines? Maybe I should have asked that before my Wal-Mart trip yesterday. But never fear I have to go back that way April first so I can stop and look for them them.

  2. Ha - you are too funny! Seriously, if I didn't have diabetes, not sure how "good" I would be to weigh all my food - even the bad stuff!

    I haven't had that brand of soup before, but I have had the roasted red pepper/tomato combo and absolutely love it!

    Of course, with lots of dashes of Tabasco! :D

  4. I have an idea. Screw the job share and come be my personal food advisor! Fage, soup, cuties....oh heck yeah :) You totally get it. I'll pay your gas here and you'd sleep in a really cool pimped out bed with a 3-inch Tempur-pedic-lookalike mattress pad...please? Please Please? I'm tired of thinking. This book has numbed my brain.

  5. Deborah: Clementines are these nifty little oranges that don't make a mess when you peel them (i.e. the juice doesn't get all over your fingers)

    Biz: You're welcome...and I'll have to try some Tabasco in my soup tomorrow!

    H.K.: I've had to work at figuring out what low-cal snacks and meals that are easy easy easy to bring to work - when I remember what others I like, I'll post them.

    Lynn: I am laughing because I wish Biz would come live with me and fix MY meals!!! Although the offer is tempting...and I'd get to see your cutting board collection first-hand!
