FMM - Cake, Pie, Oh My Thighs!

Our little town has hit the big time - a Nothing Bundt Cakes opened up last week!  I've heard about them, ironically mostly via other healthy living bloggers, but when our running buddies Karen and Jimmy mentioned that they'd already been to the new shop and pronounced the cakes delicious, well, you know we had to go.  The shop was really cute and along with the cakes, they also had some nice gift items and good greeting cards, so I'll have to remember that next time I need something.  But back to the cake - they sell bundt cakes (which they bake right there) in two different sizes, plus a mini "bundtlet" cake, which is the perfect size for two people (or one, but you might go on sugar overload).  We bought their red velvet bundtlet, which comes in this handy clamshell packaging:
Blogger fail on actually getting a picture out of the package - but I kind of messed it up, anyway.  Trust me, it looked pretty until I tried to cut it in half and remove it.

This was really delicious.  And a few days later, we got a card in the mail with a coupon for a free bundtlet, so of course we'll have to use it.  But I have a feeling the calorie count on this is most likely a little more than I need, except for a very special occasion, so I probably will not become a regular consumer of these yummy little cakes.

I made a lemon icebox pie for the Fourth of July holiday, and it turned out so good!  It's super easy - I just combined two cans of sweetened condensed milk with nearly a cup of freshly squeezed lemon juice and poured the mixture into a graham-cracker pie crust and froze it overnight.  I topped it with some Cool Whip, but honestly, that didn't add anything to the pie so I ended up scraping it off of my piece.  This was a refreshing dessert on such a hot day:
Before I scraped off the Cool Whip - and now that I think about it, this would also be good just poured into some small ramekins and frozen - no need for the crust.  Saving calories wherever I can, in order to eat the good stuff!

Remember last week when I noted how my legs were looking firmer after all of that walking and running?  I know that I can't outexercise this kind of treat calories, which is why I rarely make desserts.  I like them, yes I do - but I also appreciate having my legs look halfway decent, so this is going to be the last of it as far as desserts go, for a long while.  I enjoyed them, but no more.  Time to rein it in before I see cake on my right thigh, and pie on my left.  Been there, done that, have the size 24 pants saved for posterity to prove it!

Guess who turned 10 this week?  This little puppy:
He was so cute - he's about a year old here.

This was my view after a trip to the vet for his anti-itch steroid shot:
Different couch, same dog, just a little bigger and grayer.

He got a bath and his nails trimmed for his birthday, and a spoonful of peanut butter plus several dog cookies.  Not a bad life for a dog who was found wandering the streets and brought into the local animal shelter, right?

We don't have a lot planned for this weekend, other than to get a shortish run in and try not to die - it's just plain hot, no matter how early we get outside.  But you can be sure breakfast with our running buddies will be happening, and then some hammock time.  Hey, MC Hammer should rewrite his song to reflect this!

    That lemon pie looks really good! My all-time favorite dessert is lemon meringue, but this sounds a lot easier. Maybe if you did the ramekins, you could just sprinkle some graham cracker crumbs on top? Yum.

    I actually just got my first ever Starbucks mug a couple weeks ago. Well, kind of. My mom bought an Ohio one for T since he's Ohioan-by-marriage or something now (it was a really nice gesture). But it says "Made in Ohio," so I naturally assumed it was a gift for me! I bought her a Chicago one in return. I think it's cool that so many people collect them from all over - wish I had known about them when I was traveling more last year!

  2. I used to make that pie! I've gotten where I don't make any desserts (much to my kids disappointment). But, I've been thinking about homemade (baked) banana pudding with meringue for a while. I may have to cave. I love the SB mugs! My latest is NC. We don't need a Nothing Bundt Cakes here. Just, no.

  3. I've never heard of lemon icebox cake but it looks so refreshing!

    I think I may have cried a little when Baylee turned 10! I just can't handle aging pets. I want them to be 5 forever and ever and ever!!!!

    1. Our cats are both 11, and Paco is 10. I did not plan well for this...but hopefully, we are a long way off from dealing with that rainbow bridge.

    That lemon pie--that might be the next lemon creation I make for my mom. I could actually assemble it at her house and put it right in the freezer. How fun would that be?!

    Good call on cutting back on desserts - that is my weak spot and I need to follow your lead! Only, not so much that I am making them, but buying them!

  9. Off subject, is there any method you use for attracting more readers and being more involved with the blogging community? I have been writing for years and still just have 43 followers - does this mean my blog is boring??? just curious...

Well, I guess just the fact that I've been blogging on a regular schedule for years has helped with readership; I definitely have not been good with promoting my blog via social media, so my other involvement with the blogging community has pretty much all come from reading and commenting on other blogs. That said, I don't helicopter comment - meaning, I don't just swoop down and scatter a "nice post!" comment on tons of blogs - I read the blogs that interest me and try to leave comments pertaining to the actual post. Hope this answers your question...and I don't think your blog is boring. :)

  11. Happy happy belated birthday dear Paco. You give me so much pleasure and fun with your appearances on Mom's blog.

    That dessert looks delicious! I hardly ever order dessert when we are eating out, mostly because the desserts here are pretty standard and boring and I can do it better myself.

    Can you believe it that I never had red velvet cake? I have a recipe for cupcakes, might try that soon.
